Vestige Son Vell is an eighteenth-century Menorcan manor — a grand country lloc with an arcaded, almost ecclesiastical façade — set in its own gardens and farmland a few minutes inland from Ciutadella, on the quiet south-western corner of the island. Restored and reopened by the Vestige Collection, it is one of the most considered hotels to have arrived in the Balearics in years.

What makes it unusual is its restraint. A house of this scale could easily have been turned into something glossy; instead the restoration left the building's age visible — weathered stone, lime-washed walls, terracotta floors worn smooth — and let the formal box gardens, the long oval pool and even a Bronze Age stone talayot on the grounds do the talking. It feels less like a hotel than a great private estate that has quietly opened its doors.

The interiors are the work of a careful, restrained hand. Walls are finished in lime and soft earth tones; ceilings carry their original chestnut beams; floors are old terracotta and stone. Against this quiet shell sit pieces that mix the antique and the contemporary — a baroque mirror beside a modern lamp, woven rattan against rough plaster, sculptural chandeliers hung in rooms that have otherwise been left almost bare. Nothing is overworked. The palette is the sand, clay and olive of Menorca itself.

Rooms and suites are spread between the main house and the surrounding estate buildings, each shaped by the old architecture rather than imposed on it. Expect beamed ceilings, lime-washed walls in chalk and clay, soft headboards, white linen and the occasional carved stone fireplace; bathrooms with freestanding tubs set beneath sloping rafters. Many open through tall shuttered doors onto a private terrace, a stretch of garden, or the long view across the Menorcan countryside. The quiet is complete.

Dining centres on Vermell, the hotel's restaurant, set under the stone arches of the old courtyard and spilling out onto a terrace among lemon trees and olive jars. The cooking is Mediterranean and unmistakably Menorcan — built on the island's fish, its famous cheeses, and vegetables and herbs from the estate's own gardens — served simply and with confidence. Breakfast is long and generous; the wine list leans local. On a warm evening, with the light going down over the gardens, there are few better tables on the island.

Son Vell sits in the gentlest part of Menorca, close to some of the most beautiful beaches in the Mediterranean — the turquoise coves of Cala Turqueta, Macarella and Son Saura are a short drive or a walk along the coastal Camí de Cavalls. Ciutadella, the island's most handsome town, is ten minutes away: a harbour, a cathedral, and a tangle of honey-stone lanes made for slow evenings. Beyond, this is a UNESCO Biosphere Reserve of dry-stone walls, prehistoric monuments and a deep, protected quiet.
