Can Domo is a seventeenth-century agroturismo set into the wooded hills above Cala Llonga, on Ibiza's gentler eastern side. A working finca for most of its life, it was restored as an adults-only hotel that keeps the farm's bones — thick whitewashed walls, beamed ceilings, the slow geometry of an old Mediterranean farmhouse.

It is the antidote to the Ibiza of the clubs: quiet, green, and far enough inland that the loudest sound is usually the cicadas. The island's beaches and its old town are close, but the hotel itself asks very little of you beyond staying still.

The restoration is rustic without being heavy-handed. Lime-washed walls and original timber beams are paired with rattan, raw linen and a few good antiques; bathrooms are carved into the old stone, with stone basins and rainfall showers. Nothing is over-designed. The palette is the finca's own — chalk white, olive green, the warm grey of weathered wood — and it carries from the bedrooms out into the gardens.

Eighteen suites, no two alike, spread through the old farmhouse and its outbuildings. Whitewashed walls, woven pendants, canopy and four-poster beds, and terraces that open onto the gardens or the valley. The rooms are cool and dim by design — built for the Mediterranean summer — and furnished with the restraint the building deserves.

Mediterranean gardens climb the hillside in terraces — olive, pine, rosemary and bougainvillea — with a saltwater pool set among them, parasols and daybeds at its edge, and the valley falling away beyond. It is the heart of the hotel: somewhere to read, to swim, and to lose an afternoon without noticing.

The hotel's restaurant cooks close to the land — vegetables from the garden, Ibizan produce, Mediterranean dishes served under the trees or in the beamed dining room. Dinner is candlelit and leisurely, the wine list strong on Spanish growers. It is the sort of kitchen that makes leaving the property feel unnecessary.

Cala Llonga, a calm family beach in a deep green inlet, is a few minutes downhill. Santa Eulària, the most easygoing of Ibiza's towns, is ten minutes away, with a good marina and a Sunday craft market. Ibiza Town and its Renaissance walls are twenty minutes south; the bohemian Las Dalias market and the island's wilder northern coves are within easy reach. The airport is half an hour away, but feels further.
